Fast, full of flavor, and totally crave-worthy, this dish comes together in just 10 minutes with a few pantry staples. A rich, nutty sauce made from peanut butter, soy, ginger, lime, and a touch of sweetness wraps around your favorite noodles for the perfect balance of creamy, salty, and spicy.
It’s a hit with adults, a win with kids, and easy to customize — go big with heat, toss in extra veg, or top it off with crispy tofu or shredded chicken. However you make it, this is the kind of meal that delivers bold comfort in every bite.

1 pack rice noodles
– or other noodles
1 inch fresh ginger
1-2 garlic cloves
1 Tbsp smooth peanut butter
1 tsp garlic flakes
– or granulated garlic
1 tsp smoked/regular paprika
1 Tbsp tamari/soy
(Tamari for gluten free)
1 Tbsp maple or honey
1/2 lime juice
Optional: Pinch of salt
Garnish:
Chopped cilantro & lime wedges
1. Boil a big pot of water. Grate the ginger and press garlic and place in a small bowl. Add the rest of the ingredients WITHOUT the salt. Mix well until peanut butter is completely dissolved and not clumpy.
2. Taste the sauce, if needed at a pinch of salt. This will depend on the saltiness of your peanut butter and the soy sauce you use (Tamari is generally less salty).
3. Cook the noodles in the boiling water according to instructions on the package and strain when ready. If making the noodles in advance, mix with 1 tsp of sesame oil (or any veg. oil you have) to prevent noodles from sticking.
4. When ready to serve, mix the noodles with the sauce and garnish with chopped cilantro. Serve either hot or cold, and enjoy!
Note: you can add any vegetable to the noodles; either steam or lightly sauté veggies in a bit of oil before mixing. Don’t forget to make more sauce if you add lots of veggies.
