This easy chicken schnitzel recipe is the kind of comforting classic you’ll want on repeat. All you need is a chicken breast, breadcrumbs, and a hot pan. In just a few minutes, you’ve got crispy perfection that’s ideal for a quick weeknight meal or a weekend indulgence. Serve it with fries, a simple salad, or your favorite Mediterranean sides – it’s guaranteed to please the whole family.

Our Schnitzel spice mix is made with Mediterranean-inspired spices and herbs that bring bold, herby flavor to your breaded chicken (or tofu!). Just mix it into your breadcrumbs, fry until golden, and watch a basic schnitzel become something special – fast, easy, and crazy good.

1.5 lbs Chicken breast (about 3 breasts)
1 cup all-purpose flour
1 egg
1 cup breadcrumbs
1-2 tsp salt
2 Tbsp Schnitz happens (or other mixes – see below)
Frying oil (Safflower, sunflower, ghee, etc.)
1. Prep your protein: If you have full chicken breasts, cut them in the middle to create thin slices (unless it’s precut). If you find some slices a bit too thick, pound them with a meat mallet. We recommend placing baking paper or plastic rap above the chicken to avoid splatter.
Pat dry the chicken well with a paper towel.
2. Prepare 3 bowls: flour, beaten egg, and breadcrumbs. You can find gluten-free breadcrumbs if that’s your dietary preference. Regardless, add salt and 2-3 Tbsp on your preferred spice blend.
3. Take each breast, and dip in the three bowls: first cover it with thin layer of flour, and shake a bit to remove any access. Then dip in the egg make sure it’s fully submerged and covered, and finally cover it completely with your delicious breadcrumbs mix
4. Place a large frying pan (or just make it in batches) on medium-high heat and add about 1/4 inch high oil. After 3-4 minutes check with the tip of the protein: when you see and hear the sizzle, the oil is ready Carefully place the chicken tofu in the hot oil and fry for 3-4 minutes on each side.
5. While your protein is cooking, prepare a plate with paper towels and place the fried schnitzel with a paper towel between each layer.
Seasoning suggestions: Schnitz Happens!, OR, Paprika and garlic powder, OR, Dry parsley, oregano, and thyme.
Vegetarian Schnitzel: EXTRA FIRM tofu. But the tofu to 1 inch wide sticks, place on your cutting board or counter with 4-5 paper towels under and above. Place a heavy pan or another board and press it down until the paper towels soak most of the water.
Note: if you’re frying in batches, you might need to add a bit of oil every round or two. When you add oil, give it a minutes to reach the desired temperature.
