2 lbs of ground meat (Lamb, beef, turkey or mix)
6 crushed garlic
½ – 3/4 cup chopped parsley & cilantro (or just one of them)
1 Onion- very finely chopped
2 tsp baking soda
Salt, pepper (about 2 tsp salt, 1 tsp pepper)
1. Mix the ground meat and all the ingredients in a large bowl, and let sit for 30-60 minutes. If making the night before, add the baking soda ONLY 30 minutes before preparation. Meanwhile, light up your grill, if using charcoal.
2. Shape into small sausage-like or small patties, and grill for 10 minutes or until fully cooked.
* Take a small piece of ground meat and cook quickly to determine if you want more salt and to adjust seasoning.
Note: these are also fabulous frying in some oil, or in the in the oven on 400º F (200º C)
