We’ve used our Mama Shawarma spice mix to bring bold, Middle Eastern flair to this dish. A quick pan-sear is all it takes to create a beautifully spiced, golden crust that’s bursting with Mediterranean charm.

By fillets
Cod cut into 1.5 inch cubes (or use other meaty fish)
Olive oil
Mama Shawarma spice mix (or Grillin me Softly)
Salt
Butter/ghee/cooking goil
Lemon
Parsley for garnish
1. Pat dry your fish with paper towel and cut into cubes, not to small, about 2″.
2. Mix in a bowl with some olive oil, spice mix, and a pinch of salt
3. Warm up non-stick pan to medium heat. I love using the cast iron, which is naturally non-stick, but give it some time to heat up.
4. Add a bit of oil, butter or ghee, place your fish, with space between the pieces for about 2 min on each side, until it’s white and flaky in the middle.
5. Remove from the pan, and garnish with some chopped parsley and lemon slices.
Note: Don’t be tempted to over cook – it continues to cook a bit after you remove it from the pan.
