Mediterranean Grilled Chicken Shish Kebabs: Easy, Juicy, and Full of Flavor

1 lb chicken thighs
Large handful fresh cilantro and parsley
Small handful fresh mint
3 cloves of crushed garlic
6 scallions
1 red chili
Zest and juice of 1 lemon
Sea salt, black pepper
1/4-1/2 cup Olive oil
Optional: grape/cherry tomatoes
1. Cut the chicken into 1-2 inch cubes. Mix all the marinade ingredients (except the oil) in a food processor, and pulse until finely chopped.
2. Mix marinade with chicken, and add olive oil until meat is covered. Let sit for at least one hour.
3. Place about 5-6 pieces of marinated chicken on skewers. Add some grape tomatoes on each side, and grill for 5-10 minutes until fully cooked.
Note: you can skewer in advance, and let marinated in a large dish until you’re ready to grill!
