Mediterranean Grilled Chicken Shish Kebabs: Easy, Juicy, and Full of Flavor

These Mediterranean chicken shish kebabs are everything you want in a quick dinner—bold, herby, and packed with juicy flavor. Marinated in fresh herbs, lemon, and spices, then grilled to perfection, they’re a delicious nod to traditional Middle Eastern and Mediterranean street food.

To make them, blend lemon juice with garlic, fresh herbs, olive oil, and spices. Coat the chicken in the marinade and let it rest, then skewer and grill until golden and slightly charred. That’s it—easy prep, big payoff.

Ingredients

1 lb chicken thighs

Large handful fresh cilantro and parsley

Small handful fresh mint

3 cloves of crushed garlic

6 scallions

1 red chili

Zest and juice of 1 lemon

Sea salt, black pepper

1/4-1/2 cup Olive oil

Optional: grape/cherry tomatoes

Directions

1. Cut the chicken into 1-2 inch cubes. Mix all the marinade ingredients (except the oil) in a food processor, and pulse until finely chopped.

2. Mix marinade with chicken, and add olive oil until meat is covered. Let sit for at least one hour.

3. Place about 5-6 pieces of marinated chicken on skewers. Add some grape tomatoes on each side, and grill for 5-10 minutes until fully cooked.

Note: you can skewer in advance, and let marinated in a large dish until you’re ready to grill!
